This quiche is everything you love about breakfast baked up into one yummy pie. But if you say you’re eating bacon and egg pie for breakfast, it loses that Je ne sais quoi.

There isn’t anything difficult about this recipe, either. Just whisk everything together, bake, and eat! Use the time saved in the kitchen to practise a little self care (or your French)!

Quiches make for an easy-peasy meal-prep option. You could also make Egg Bites or Pancakes or Lemon Poppyseed Muffins! I found meal prep invaluable when I was trying to watch my weight. It prevented me from blasting through my macros early in the week.

Can I Make This With A Crust?

The bacon serves as a crust of sorts. If you would like a more conventional crust that is still keto friendly, you will use almond flour, coconut flour, or a mixture of the two. Then add egg, melted butter, salt, and baking powder, and combine until a dough is formed. Line the pie tin with the dough and bake in a preheated 350°F oven for 10-15 minutes. THEN proceed with the recipe filling.

You can also make a crust of sausage. Refer to my recipe for Sausage Crust Pizza and adapt it to this recipe.

Ingredients

  • 8 eggs
  • 8 slices bacon
  • 1/4 cup + 1/8 cup half n half
  • 2 oz diced onion
  • 1 clove garlic, minced
  • 1 cup shredded cheddar cheese
  • pinch of salt and pepper

Instructions

  1. Preheat oven to 400 degrees. Line a cookie sheet with the bacon. When the oven has reached temperature, cook the bacon 15 to 20 minutes until it begins to crisp.
  2. Reduce the oven temperature to 350 degrees. Grease a 9″ pie plate and set aside.
  3. In a large bowl, thoroughly beat the eggs and half ‘n’ half.
  4. Add the onion, garlic, and spices and whisk to combine.
  5. Roughly chop the bacon and sprinkle upon the bottom of the pie plate.
  6. Pour the egg mixture on top of the bacon. Top with cheese.
  7. Bake for 35 minutes or until the center is set.
  8. Cool for 5 to 10 minutes before serving.

FAQs

How do I prevent a runny quiche?

Make sure you lower the temperature of the oven before putting the quiche back in (after you’ve added the egg mixture). It’s also important to let the quiche sit for the 5-10 minutes mentioned in the instructions. Doing so allows it to set and prevent runniness.

Can I use this recipe to make mini quiches?

I haven’t tried it but I don’t see why not. Using a muffin tin, line each cup with the bacon then bake. Then add the egg mixture to each cup. You will need to keep an eye on them though, as the time listed in this recipe won’t apply.

What can I substitute for the half ‘n’ half?

You can use heavy cream or Greek yogurt. You will want to avoid mixing anything with milk as milk is high in carbs and therefore, not keto friendly.

How To Store Keto Quiche

Let the quiche cool to room temperature then wrap/cover it in plastic or aluminum. An airtight container works just as well. From here, you can either store it in the fridge for 3-4 days or in the freezer for 3 months. If frozen, the quiche will need to be thawed overnight in the fridge before you reheat it in the oven or microwave.

Notes

Slice and freeze individual pieces for future grab and go! It will defrost by the time you get to work and are ready to eat!
