Low Carb Fried Cheese Sticks

Who else loves (used to love) mozzarella cheese sticks? They were always a favorite appetizer or snack of our family. Obviously, we don’t eat them anymore because they’re breaded and fried in unhealthy oils (usually canola/vegetable oil).

BUT…there is a low carb alternative that is BETTER than regular mozzarella cheese sticks!

Behold, BREAD CHEESE! If I could use sounds on my posts, you’d hear angels singing right now!

Bread cheese is a dense cheese that is specifically for frying. It gets crispy and crunchy on the outside and stays gooey inside. It’s buttery, nutty, and delicious! You can dip it in low carb marinara sauce and it seriously tastes exactly like a traditional cheese stick without the processed crap and carbs!

I’ve used a brand called Carr Valley Bread Cheese. You can also buy halloumi (when in season) or queso fresco (a Hispanic frying cheese).

I find mine in the “fancy” cheese section at my grocery store. It’s a bit expensive (between $5-10 for 8oz) but it is a wonderful low carb treat!

I’ve had so many people ask me how I make mine so I thought a short little tutorial would make for a good post.

Heat a skillet over med-high heat. Pour enough oil to have a thin layer in the pan. We don’t need to completely submerge the cheese in the oil but we need enough for the edges to be submerged.

Add 1 tablespoon of butter when you start hearing the oil sizzle. The oil creates the crunch and the butter gives flavor!

I’ve sliced 4oz of cheese (half of the block) into about 1″ sticks. Just eyeball this. No need to be precise!  Put them into the oil and let each side fry for about 60-90 seconds. This process goes FAST! And the oil will pop and getcha. This is why I suggested an apron!

Don’t worry about burning them! The beauty of bread cheese is that it is pretty much indestructible! Eat right away so they stay gooey (they’ll harden back up when they’re cool).

Macros will vary based on your specific brand of cheese! Oil and butter are both zero carb!
